Tomato Pie

The tomato pie is a true southern classic.  Try out this family favorite, preferably when tomatoes are in season!

1 pre-made pie crust

3/4 cup flour

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup mayonnaise

1 cup shredded colby jack cheese

 4 medium tomatoes, sliced

1 tablespoon dried basil

8-12 pieces of bacon, cooked and crumbled

 

Pre-bake piecrust in the pan for 9 minutes at 400 degrees. (If you poke plenty of holes in the bottom and sides of the crust with a fork once it's in the pan, it will not draw up while pre-baking.)

Combine flour, salt and pepper.

Dredge tomato slices in flour mixture and set aside.

Layer tomatoes, basil and bacon. Repeat until pie crust is filled.

Mix mayonnaise and cheese and top the layered pie.

Bake at 375 degrees for 25-30 minutes, or until golden brown.
