Bow Tie Pasta with Avocado and Bacon

This is one of my most favorite recipes to make during the summer when avocados are ripe and fresh basil is abundant!

Ingredients:

  • 12 ounces dried bow tie pasta

  • 2 - 3 medium avocados, chopped

  • 6 slices bacon, crisp cooked, drained, and crumbled

  •  cup chopped fresh basil (dried basil is not a good substitute in this recipe!)

  • 1/2 cup chopped green onions or yellow onions.  
  • one cup chopped cherry tomatoes.  I like the heirloom variety. I also like more than one cup! 
  • tablespoons lemon juice

  • 1-2 tablespoons olive oil

  • cloves fresh garlic, minced

  • ¼ teaspoon ground black pepper

  •  teaspoon salt

  • ½ cup finely grated parmesan cheese plus a little extra for the top

Directions:

I like to prep all of my other ingredients before I cook my pasta.  If you are having company, you can have all of the sauce and veggies ready and then mix in hot pasta when your guests arrive!  That way you can tidy up the kitchen and not be stressed.

Sauté onions in a skillet with a little butter or oil.  Add tomatoes and heat just until the tomatoes are tender. (I love to use the infused sunflower oil from Oliver Farms!  You can purchase it in person at The Merc or order it on their website: Infused Sunflower Seed Oil—Oliver Farm Artisan Oils  It is also great for dipping your warm, crusty bread) 

In a large bowl combine the sautéed veggies, avocados, bacon, basil, lemon juice, olive oil, garlic, cheese, pepper, and salt. Add the hot pasta and toss to combine. Transfer to a serving bowl. Sprinkle with extra cheese. Makes 4 - 6 servings.  Wonderful served with grilled chicken, warm bread.  Add a light green salad if you need to stretch your servings.
