We have tweaked this recipe over the years and it has become one of our favorite versions of potato salad. Filled with boiled egg, celery, bacon, and ranch dressing, how can you go wrong? Try out this recipe at your next family gathering!
5 lbs potatoes, diced
12 slices of bacon, cooked and crumbled
10 eggs, boiled and chopped
1/2 cup red onion, chopped
1/2 cup celery, chopped
salt and pepper
Boil potatoes until tender, about 12 minutes.
Drain and allow to cool.
Combine potatoes, bacon, eggs, onion and celery.
Salt and pepper to taste.
Toss with ranch dressing, starting with about 1 cup.
If needed, add more dressing until you reach the desired consistency.
Add ranch seasoning, salt and pepper to taste.
